  • 4 pieces boneless, skinless chicken breasts
  • 1/4 cup honey
  • 2 tablespoons soy sauce Can substitute with gluten-free tamari.
  • 1 tablespoon freshly ground black pepper
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced Optional ingredient.
  • to taste Salt
  • to taste Fresh parsley, for garnish Optional.

Method
 

Preparation
  1. Season both sides of the chicken breasts with salt and freshly ground black pepper.
  2. In a small bowl, whisk together honey, soy sauce, and minced garlic (if using). Set aside.
Cooking
  1. In a large skillet, heat the olive oil over medium heat. Once hot, add the seasoned chicken breasts.
  2. Cook for about 6-7 minutes on each side, or until golden brown and cooked through.
  3. When the chicken is nearly done cooking, pour the honey sauce over the chicken in the skillet.
  4. Let it simmer for another 2-3 minutes, allowing the sauce to thicken and coat the chicken beautifully.
Serving
  1. Once the chicken is fully cooked and the sauce glistens, remove the skillet from heat.
  2. Garnish with fresh parsley if desired and serve hot.

Notes

For an extra depth of flavor, marinate the chicken breasts in the honey sauce for 30 minutes before cooking. Store leftovers in an airtight container for up to 3 days in the fridge or 2 months in the freezer. Reheat over low heat with a splash of water or broth.
