Honey Mustard Potatoes Recipe
Honey Mustard Potatoes are a delightful side dish that’s crispy on the outside, tender on the inside, and bursting with the sweet and tangy flavors of honey and mustard. Perfectly roasted and caramelized, they pair beautifully with everything from grilled chicken to hearty steaks.
- - 2 lbs baby potatoes halved
- - 3 tbsp olive oil
- - 2 tbsp Dijon mustard
- - 1 tbsp whole grain mustard
- - 2 tbsp honey
- - 2 cloves garlic minced
- - 1 tsp smoked paprika
- - 1/2 tsp salt
- - 1/4 tsp black pepper
- - Fresh parsley chopped (optional, for garnish)
#### Prepare the Potatoes:
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or foil.
In a large mixing bowl, combine olive oil, Dijon mustard, whole grain mustard, honey, garlic, smoked paprika, salt, and black pepper. Whisk until well blended.
#### Coat the Potatoes:
Add the halved baby potatoes to the bowl and toss until they are evenly coated with the honey mustard mixture.
#### Roast the Potatoes:
Spread the coated potatoes in a single layer on the prepared baking sheet.
Roast in the preheated oven for 35–40 minutes, flipping halfway through, until the potatoes are golden brown and tender.
