- Begin by juicing the lemons until you have 1 cup of fresh juice. Strain the juice to remove seeds if desired.
- In a pitcher, combine the lemon juice and honey. Stir well until the honey is fully dissolved. Add more honey if a sweeter drink is preferred.
- Gently stir in the fresh thyme leaves to infuse the drink with an earthy taste.
- Pour the cold water into the pitcher and mix thoroughly. Adjust the sweetness or lemon flavor to taste.
- Let the mixture chill in the refrigerator for at least 15 minutes. Serve over ice, garnished with lemon slices or additional thyme if desired.
Notes
Store in the refrigerator for up to 3 days in a sealed container. For longer storage, freeze in ice cube trays to use in other drinks.
