Preparation
  1. Wash the fresh carrots and green beans. Slice the carrots into even rounds for uniform cooking and trim the ends off the green beans.
Blanching
  1. In a large pot of boiling salted water, briefly blanch the carrots and green beans for about 2-3 minutes. This will help maintain their vibrant colors and crunchiness. After blanching, drain and transfer them into an ice bath to halt the cooking process.
Creating the Glaze
  1. In a large skillet over medium heat, melt the butter. Once melted, add the honey and stir well to combine.
Cooking the Vegetables
  1. Add the blanched carrots and green beans to the skillet. Toss to coat all the vegetables evenly. Cook for about 5-7 minutes, stirring occasionally, until the carrots are tender and glazed with golden-brown honey.
Seasoning and Serving
  1. Add salt and pepper to taste, removing the skillet from heat once done. Transfer to a serving dish and enjoy while warm!

Notes

For substitutions, maple syrup can replace honey. Avoid using pre-packaged frozen vegetables for the best texture and flavor. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days or frozen for up to 2 months.
