Method
Preparation
- Wash the fresh carrots and green beans. Slice the carrots into even rounds for uniform cooking and trim the ends off the green beans.
Blanching
- In a large pot of boiling salted water, briefly blanch the carrots and green beans for about 2-3 minutes. This will help maintain their vibrant colors and crunchiness. After blanching, drain and transfer them into an ice bath to halt the cooking process.
Creating the Glaze
- In a large skillet over medium heat, melt the butter. Once melted, add the honey and stir well to combine.
Cooking the Vegetables
- Add the blanched carrots and green beans to the skillet. Toss to coat all the vegetables evenly. Cook for about 5-7 minutes, stirring occasionally, until the carrots are tender and glazed with golden-brown honey.
Seasoning and Serving
- Add salt and pepper to taste, removing the skillet from heat once done. Transfer to a serving dish and enjoy while warm!
Notes
For substitutions, maple syrup can replace honey. Avoid using pre-packaged frozen vegetables for the best texture and flavor. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days or frozen for up to 2 months.
