Preparation
  1. Preheat your oven to 400°F (200°C) to prepare for roasting.
  2. In a large bowl, toss the diced sweet potatoes with olive oil, salt, and pepper. Spread them out on a baking sheet in a single layer.
  3. In the same bowl, combine sliced sausage, honey, soy sauce, and minced garlic. Mix well to ensure that the sausage is evenly coated.
Cooking
  1. Once the sweet potatoes have roasted for about 15 minutes, add the sausage mixture to the baking sheet, spreading it out evenly over the sweet potatoes.
  2. Return the baking sheet to the oven and roast for an additional 20-25 minutes until the sweet potatoes are fork-tender and the sausage is heated through and caramelized.
  3. Once done, take the sheet pan out of the oven, sprinkle fresh parsley on top if desired, and serve hot.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3-4 days. This dish can also be frozen in a freezer-safe container for 2-3 months.
