Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Peel and dice the sweet potatoes into about 1 inch cubes to ensure even cooking.
  3. In a large bowl, combine the diced sweet potatoes, olive oil, salt, pepper, and minced garlic. Toss until well-coated.
  4. Spread the sweet potato mixture onto a baking sheet in a single layer.
  5. Cut the honey garlic chicken sausage into bite-sized pieces and scatter them over the sweet potatoes.
Cooking
  1. Place the baking sheet in the oven and bake for 25-30 minutes, or until sweet potatoes are tender and sausage is browned. Toss halfway through.
  2. Sprinkle fresh herbs over the dish just before serving.
  3. Serve hot and enjoy your meal!

For substitutions, consider turkey sausage or other types of sausage. Ensure even cutting of sweet potatoes for consistent cooking, and avoid overcrowding the baking sheet.
