Preparation
- In a small bowl, whisk together the honey, Dijon mustard, olive oil, minced garlic, salt, and black pepper to create the marinade.
- Place the chicken breasts in a shallow dish or a resealable plastic bag and pour the marinade over them, ensuring each piece is well-coated. Marinate in the refrigerator for at least 30 minutes, or up to 3 hours for more flavor.
- Preheat your oven to 375°F (190°C).
Cooking
- Transfer the marinated chicken breasts to a baking dish (retain leftover marinade for basting if desired). Bake in the preheated oven for 20-25 minutes, or until the internal temperature reaches 165°F (75°C).
- Baste with leftover marinade halfway through cooking if desired.
Serving
- Remove the chicken from the oven and allow it to rest for about 5 minutes before slicing to keep it tender and juicy.
Notes
For substitutions, consider using maple syrup instead of honey for a unique flavor, or olive oil and lemon juice if you're sensitive to mustard. To avoid overcooking, use a meat thermometer. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days, or frozen for up to 3 months. Reheat in the oven at 350°F (175°C).
