Preparation
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, beat the softened butter and honey together until creamy and smooth, about 2-3 minutes.
- Add the egg and vanilla extract to the mixture and mix until well combined.
- In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon (if using).
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Using a spoon or cookie scoop, drop rounded tablespoons of cookie dough onto a lined baking sheet, leaving space for spreading.
- Sprinkle a light pinch of sea salt on top of each cookie.
- Bake in the preheated oven for about 10-12 minutes or until the edges are slightly golden.
- Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
Store leftovers in an airtight container to keep them fresh for several days. They can be frozen for up to three months.
