  • 2 cups all-purpose flour Sifted
  • 1 cup unsalted butter, softened At room temperature
  • 1 cup honey Preferred grade
  • 1 large egg egg At room temperature
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon Optional
  • to taste pinch sea salt For sprinkling on top

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, beat the softened butter and honey together until creamy and smooth, about 2-3 minutes.
  3. Add the egg and vanilla extract to the mixture and mix until well combined.
  4. In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon (if using).
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Using a spoon or cookie scoop, drop rounded tablespoons of cookie dough onto a lined baking sheet, leaving space for spreading.
  7. Sprinkle a light pinch of sea salt on top of each cookie.
  8. Bake in the preheated oven for about 10-12 minutes or until the edges are slightly golden.
  9. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

Store leftovers in an airtight container to keep them fresh for several days. They can be frozen for up to three months.
