Preparation
  1. Preheat your oven to 350°F (175°C) to ensure even baking.
  2. Grate the carrots finely using a grater or a food processor for better incorporation.
  3. In a large bowl, combine melted butter and honey. Stir until well blended, then add eggs one at a time, blending thoroughly after each addition. Stir in vanilla extract.
  4. In another bowl, whisk together flour, baking powder, cinnamon, and salt.
  5. Gradually mix the dry ingredients into the wet ingredients, being careful not to over-beat, and gently fold in the grated carrots until just combined.
  6. Pour the mixture into a greased pie dish, spreading it evenly.
