Preparation
- Preheat your oven to 350°F (175°C) to ensure even baking.
- Grate the carrots finely using a grater or a food processor for better incorporation.
- In a large bowl, combine melted butter and honey. Stir until well blended, then add eggs one at a time, blending thoroughly after each addition. Stir in vanilla extract.
- In another bowl, whisk together flour, baking powder, cinnamon, and salt.
- Gradually mix the dry ingredients into the wet ingredients, being careful not to over-beat, and gently fold in the grated carrots until just combined.
- Pour the mixture into a greased pie dish, spreading it evenly.
Baking
- Place in the preheated oven and bake for about 30–35 minutes, or until a toothpick inserted into the center comes out clean.
Serving
- Let the pie cool for a few minutes before slicing. Serve warm with your choice of toppings.
Notes
For variations, consider using grated zucchini or sweet potato as substitutes for carrots. To keep pie fresh, store leftovers in an airtight container in the refrigerator for up to 5 days or freeze for up to a month.
