Ingredients
  

For the Carrots
  • 1 pound carrots, peeled and cut into sticks
  • 3 tablespoons honey Adjust based on sweetness preference.
  • 2 tablespoons olive oil
  • 1 pinch salt To taste.
  • 1 pinch pepper To taste.
For the Whipped Feta
  • 4 ounces feta cheese
  • ½ cup Greek yogurt Can swap with regular yogurt if preferred.
  • 1 tablespoon lemon juice

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, combine the peeled and cut carrot sticks with olive oil, honey, salt, and pepper. Toss until well coated.
Roasting
  1. Spread the carrot mixture onto a baking sheet lined with parchment paper, ensuring they are in a single layer.
  2. Roast for 20-25 minutes, or until tender and caramelized, tossing halfway through to prevent burning.
Whipping Feta
  1. While the carrots roast, combine feta cheese, Greek yogurt, and lemon juice in a small blender or mixing bowl, blending or whisking until smooth and creamy.
Serving
  1. Once the carrots are beautifully caramelised, remove them from the oven. Serve warm, drizzled with whipped feta on top.

Notes

Consider using baby carrots or rainbow carrots for vibrant presentation. Store leftovers in an airtight container for 3-4 days or freeze for up to 2 months.
