Roasting
- Spread the carrot mixture onto a baking sheet lined with parchment paper, ensuring they are in a single layer.
- Roast for 20-25 minutes, or until tender and caramelized, tossing halfway through to prevent burning.
Whipping Feta
- While the carrots roast, combine feta cheese, Greek yogurt, and lemon juice in a small blender or mixing bowl, blending or whisking until smooth and creamy.
Serving
- Once the carrots are beautifully caramelised, remove them from the oven. Serve warm, drizzled with whipped feta on top.
Notes
Consider using baby carrots or rainbow carrots for vibrant presentation. Store leftovers in an airtight container for 3-4 days or freeze for up to 2 months.
