Method
 

Preparation
  1. Preheat your oven to 400°F (200°C). Rinse the blackberries and pat them dry with a paper towel.
Sauce Making
  1. In a small saucepan, combine honey and soy sauce over medium heat. Stir well until the mixture is hot and begins to simmer.
Chicken Seasoning
  1. Season your chicken breasts generously with salt and pepper.
Searing the Chicken
  1. In a large oven-safe skillet, heat olive oil on medium-high heat. Once hot, add the seasoned chicken breasts. Sear each side for 4-5 minutes, or until golden brown.
Adding the Glaze
  1. Pour the honey-soy mixture over the seared chicken, then scatter the blackberries around the chicken in the skillet.
Baking
  1. Transfer the skillet to your preheated oven. Bake for 15-20 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
