Preparation
- Preheat your oven to 375°F (190°C) while you prepare the zucchinis.
- Wash and slice the zucchinis lengthwise into thin strips—aim for about 1/4 inch thick. Place the strips on a baking sheet and lightly sprinkle with salt, allowing them to sit for about 10 minutes to draw out excess moisture.
- In a medium bowl, combine the ricotta, mozzarella, Parmesan, egg, garlic powder, salt, and black pepper. Mix until well combined and creamy.
Assembly and Baking
- Pat the zucchini strips dry with a paper towel. Take a spoonful of the cheese filling and place it at one end of a zucchini strip. Roll the strip over the filling, securing it tightly. Repeat this process with the remaining strips.
- In a baking dish, spread a thin layer of marinara sauce on the bottom. Place the zucchini roll-ups seam-side down in the dish, then gently cover the tops with the remaining marinara sauce.
- Cover the dish with aluminum foil and bake for about 20 minutes. Remove the foil and bake for an additional 10 minutes, until bubbly and golden.
