Ingredients
  

For the zucchini roll-ups
  • 2 medium zucchinis Washed and sliced lengthwise
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup marinara sauce For serving
  • to taste Fresh basil For garnish

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) while you prepare the zucchinis.
  2. Wash and slice the zucchinis lengthwise into thin strips—aim for about 1/4 inch thick. Place the strips on a baking sheet and lightly sprinkle with salt, allowing them to sit for about 10 minutes to draw out excess moisture.
  3. In a medium bowl, combine the ricotta, mozzarella, Parmesan, egg, garlic powder, salt, and black pepper. Mix until well combined and creamy.
Assembly and Baking
  1. Pat the zucchini strips dry with a paper towel. Take a spoonful of the cheese filling and place it at one end of a zucchini strip. Roll the strip over the filling, securing it tightly. Repeat this process with the remaining strips.
  2. In a baking dish, spread a thin layer of marinara sauce on the bottom. Place the zucchini roll-ups seam-side down in the dish, then gently cover the tops with the remaining marinara sauce.
  3. Cover the dish with aluminum foil and bake for about 20 minutes. Remove the foil and bake for an additional 10 minutes, until bubbly and golden.

Notes

If using leftovers, store in an airtight container in the refrigerator for up to three days. They freeze well; bake from frozen at 375°F (190°C) for about 30-35 minutes.
