  • 2 medium zucchinis, grated
  • 3 cloves of garlic, minced
  • 1 cup breadcrumbs Use gluten-free breadcrumbs for a gluten-free version.
  • 1/2 cup grated Parmesan cheese
  • 2 large eggs
  • Salt and pepper to taste
  • Oil for frying Enough to cover the bottom of the pan.

Preparation
  1. Start by grating the zucchinis. Place them in a clean dish towel and squeeze out excess moisture.
  2. In a large mixing bowl, combine the grated zucchini, minced garlic, breadcrumbs, grated Parmesan cheese, and eggs. Mix until well incorporated. Season with salt and pepper to taste.
  3. Using your hands, shape the mixture into small patties or bite-sized balls.
  4. In a frying pan, heat the oil over medium heat.
Cooking
  1. Carefully place the formed zucchini bites in the hot oil and fry for about 3-4 minutes on each side or until they’re golden brown.
  2. Once fried, place the bites on a paper towel to drain excess oil.
Serving
  1. Serve warm and enjoy with your favorite dipping sauce!

Notes

Ensure you’ve drained the moisture from the zucchini well to avoid soggy bites. Leftovers can be refrigerated for up to 3 days or frozen before cooking.
