**Prepare the Wontons:**
- In a mixing bowl, combine ground meat, green onions, soy sauce, sesame oil, garlic, ginger, and white pepper. Mix until well combined.
- Place a wonton wrapper on a clean surface. Add 1 teaspoon of filling to the center.
- Wet the edges of the wrapper with water, fold it into a triangle, and press the edges to seal. Bring the two bottom corners together and seal with a dab of water. Repeat with remaining wrappers and filling.
**Make the Broth:**
- In a large pot, heat sesame oil over medium heat. Add ginger and garlic, sautéing until fragrant (1-2 minutes).
- Pour in the chicken or vegetable broth. Stir in soy sauce and bring to a simmer.
**Cook the Wontons:**
- Gently drop the wontons into the simmering broth. Cook for 4-5 minutes, or until the wontons float to the surface and the filling is cooked through.
- Add bok choy or spinach (if using) and simmer for an additional 1-2 minutes.
