Preparation
- Cut the watermelon into pieces and blend it until smooth. Strain the juice through a fine mesh sieve to remove any pulp. You’ll need about 1 cup of clean juice.
- In a medium saucepan, combine the watermelon juice and sweetener. Gently heat it over low-medium heat until warmed through, but not boiling.
- Sprinkle the gelatin over the watermelon juice mixture and stir gently until fully dissolved. If you’re using citric acid, mix it in at this point for that extra zing.
- Pour the mixture into silicone molds for gummies, filling each cavity. If you don’t have molds, you can pour the liquid onto a parchment-lined baking dish.
- Refrigerate the molds for about 2-4 hours, or until the gummies are set and firm to the touch.
- Once firm, pop the gummies out and store them in an airtight container.
Notes
Store in an airtight container in the refrigerator for up to a week. You can also freeze them for up to three months. No need to reheat, just enjoy directly!
