Cooking
- Heat olive oil in a large skillet over medium-high heat.
- Sear the chicken for about 6-7 minutes on each side until golden brown. Remove from skillet.
- In the same skillet, sauté the minced garlic for about a minute until fragrant.
- Add cherry tomatoes and cook for 3-5 minutes until they release their juices.
- Pour in heavy cream and bring to a gentle simmer. Stir in Parmesan until combined.
- Add spinach and stir until wilted, then return the chicken to the skillet. Cook for an additional 5 minutes.
- Serve hot, garnished with extra Parmesan and fresh basil.
