Preparation
  1. Season the chicken breasts with salt, pepper, and Italian seasoning.
Cooking
  1. Heat olive oil in a large skillet over medium-high heat.
  2. Sear the chicken for about 6-7 minutes on each side until golden brown. Remove from skillet.
  3. In the same skillet, sauté the minced garlic for about a minute until fragrant.
  4. Add cherry tomatoes and cook for 3-5 minutes until they release their juices.
  5. Pour in heavy cream and bring to a gentle simmer. Stir in Parmesan until combined.
  6. Add spinach and stir until wilted, then return the chicken to the skillet. Cook for an additional 5 minutes.
  7. Serve hot, garnished with extra Parmesan and fresh basil.

Notes

For a Halal-friendly option, ensure chicken is certified. Substitute spinach with kale or arugula if desired. Use a meat thermometer to ensure chicken is cooked to 165°F (75°C). Add sun-dried tomatoes or olives for extra flavor.
