Homemade Strawberry Pop Tarts

Ingredients
  

For the pastry crust
  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar for dough
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, chilled and cubed must be cold for flaky texture
  • 1/4 cup cold water add gradually
For the filling and icing
  • 1 cup fresh strawberries, mashed
  • 1/4 cup granulated sugar for filling
  • 1 teaspoon vanilla extract
  • 1 unit egg for egg wash
  • unit Powdered sugar for icing
  • unit Milk optional for icing, to desired consistency

Method
 

Preparation
  1. In a large mixing bowl, whisk together the flour, 1/4 cup sugar, and salt.
  2. Add the chilled butter and mix until the texture resembles coarse crumbs.
  3. Gradually add cold water until a dough forms, but do not overmix.
  4. Form the dough into a ball, wrap it in plastic, and refrigerate for 15-20 minutes.
  5. In a separate bowl, mix together the mashed strawberries, 1/4 cup sugar, and vanilla extract.
  6. Set the filling aside for the flavors to meld.
  7. Roll out the chilled dough on a floured surface to about 1/8-inch thickness.
  8. Cut the dough into rectangles (about 3x5 inches) to have enough for 8 pop tarts.
Assembly and Baking
  1. Place half of the rectangles on a baking sheet lined with parchment paper.
  2. Spoon 1-2 tablespoons of the strawberry filling in the center of each rectangle, leaving space around the edges.
  3. Top each filled rectangle with another dough rectangle.
  4. Use a fork to press down around the edges to seal the pop tarts tightly.
  5. Beat the egg and brush it over the top of each pop tart.
  6. Preheat your oven to 375°F (190°C) and bake the pop tarts for 20-25 minutes or until golden brown.
  7. Allow the pop tarts to cool.
  8. For icing, mix powdered sugar with a little milk until you reach your desired consistency and drizzle over the top.

Notes

For a flaky crust, ensure butter is cold and do not overwork the dough. Substitute strawberries with blueberries or raspberries for variety. Ensure filling isn’t too runny to avoid leaks while baking. Store in an airtight container in the refrigerator for up to 5 days or freeze before baking.
