Preparation
- Wash and hull the fresh strawberries. Cut them into smaller pieces to help them break down more easily during blending.
- In a small saucepan, combine 1/2 cup of water and 1/2 cup of sugar over medium heat. Stir until the sugar is fully dissolved. Allow it to cool slightly.
- In a blender or food processor, combine the chopped strawberries, simple syrup, fresh lemon juice, and lemon zest. Blend until the mixture is completely smooth, usually about 30 to 45 seconds.
- If you prefer a smoother texture, you can strain the mixture through a fine mesh sieve to remove any seeds. This step is optional.
Freezing
- Pour the sorbet mixture into a shallow dish. Cover and place it in the freezer.
- After about an hour, stir the mixture with a fork to break up any ice crystals. Repeat this process every 30 minutes for the next 2-3 hours until it’s frozen firm.
Serving
- Once the sorbet has reached a good texture, scoop it into bowls and add your favorite toppings. Enjoy!
Notes
For a creamier texture, consider adding a bit of cream or coconut milk during blending. Store in an airtight container in the freezer and consume within 2 weeks.
