Method
 

Preparation
  1. Wash and hull the fresh strawberries. Cut them into smaller pieces to help them break down more easily during blending.
  2. In a small saucepan, combine 1/2 cup of water and 1/2 cup of sugar over medium heat. Stir until the sugar is fully dissolved. Allow it to cool slightly.
  3. In a blender or food processor, combine the chopped strawberries, simple syrup, fresh lemon juice, and lemon zest. Blend until the mixture is completely smooth, usually about 30 to 45 seconds.
  4. If you prefer a smoother texture, you can strain the mixture through a fine mesh sieve to remove any seeds. This step is optional.
Freezing
  1. Pour the sorbet mixture into a shallow dish. Cover and place it in the freezer.
  2. After about an hour, stir the mixture with a fork to break up any ice crystals. Repeat this process every 30 minutes for the next 2-3 hours until it’s frozen firm.
Serving
  1. Once the sorbet has reached a good texture, scoop it into bowls and add your favorite toppings. Enjoy!

Notes

For a creamier texture, consider adding a bit of cream or coconut milk during blending. Store in an airtight container in the freezer and consume within 2 weeks.
