Homemade Raspberry Pop-Tarts

Ingredients
  

For the dough
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/4 tsp salt
  • 1/4 cup unsalted butter (cold)
  • 1/4 cup ice-cold water
For the filling and icing
  • 1/2 cup raspberry jam Can substitute with other jam flavors.
  • 1 egg beaten (for egg wash)
  • Powdered sugar for icing
  • Milk to mix with powdered sugar for icing Adjust to achieve desired consistency.

Method
 

Preparation
  1. In a mixing bowl, combine all-purpose flour, granulated sugar, and salt. Stir until mixed.
  2. Cut in the cold unsalted butter until mixture resembles coarse crumbs.
  3. Gradually add ice-cold water, mixing until the dough holds together. If too crumbly, add more cold water.
  4. Shape the dough into a disk, wrap in plastic wrap, and refrigerate for about 15 minutes.
Baking
  1. Roll out the dough on a floured surface to about 1/4-inch thickness. Cut into rectangles measuring about 3 x 4 inches.
  2. Place half of the rectangles on a lined baking sheet. Add a tablespoon of raspberry jam in the center of each. Place the remaining rectangles on top, pressing down the edges.
  3. Brush the tops with beaten egg.
  4. Preheat oven to 350°F (175°C) and bake for 20-25 minutes until golden and crispy.
Icing
  1. While the pop-tarts cool, mix powdered sugar with milk to create a drizzling icing.
  2. Drizzle the icing over the cooled pop-tarts and add toppings if desired.

Notes

Store in an airtight container in the refrigerator for up to 5 days or freeze for up to 3 months. To reheat, bake for about 10 minutes at 350°F or pop in the toaster.
