Ingredients
  

Dough Ingredients
  • 1.5 cups warm water (about 110°F) Must be warm but not hot for yeast activation.
  • 1 packet active dry yeast (2 1/4 teaspoons) To activate the dough.
  • 1 tablespoon sugar For yeast activation.
  • 4 cups all-purpose flour This is the main ingredient for the dough.
  • 1 teaspoon salt For flavor in the dough.
Boiling Solution
  • 1/4 cup baking soda To create the characteristic chewy texture.
  • 10 cups water For the boiling bath.
Topping
  • 1 egg beaten (for egg wash) To brush tops before baking.
  • Coarse sea salt For sprinkling on top.

Method
 

Preparation
  1. In a large bowl, combine the warm water, yeast, and sugar. Stir gently and let it sit for about 5 minutes, until it becomes frothy and bubbly.
  2. Gradually add the flour and salt to the yeast mixture. Stir until a dough forms. It should be slightly sticky but come away from the sides of the bowl.
  3. Transfer the dough onto a floured surface. Knead the dough for about 5-7 minutes until it’s smooth and elastic.
  4. Place the dough in a lightly greased bowl, cover it with a damp cloth, and allow it to rise in a warm area for about 30 minutes or until it doubles in size.
Cooking
  1. In a pot, bring 10 cups of water and the baking soda to a gentle boil.
  2. After the dough has risen, punch it down. Roll it into a long rope (about 1 inch thick) and cut it into 1-inch pieces.
  3. Carefully drop the pieces into the boiling water for about 30 seconds. Remove with a slotted spoon and place them on a parchment-lined baking sheet.
  4. Brush the tops with the beaten egg and sprinkle with coarse sea salt.
  5. Preheat your oven to 450°F (232°C) and bake the pretzel bites for about 12-15 minutes until they’re golden brown.
  6. Allow them to cool for a few minutes before serving them warm with your favorite dipping sauces.

Notes

To store pretzel bites, place them in an airtight container and refrigerate for up to 5 days or freeze for up to 3 months. Reheat in a preheated oven at 350°F for about 5-7 minutes.
