Filling
  • 1 cup powdered sugar
  • 2 tablespoons milk Adjust milk quantity for desired filling consistency.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine 1 cup of peanut butter, 1 cup of sugar, the egg, 1/2 teaspoon of vanilla extract, and 1/4 teaspoon of salt. Mix until smooth and creamy.
  3. Using a tablespoon or cookie scoop, drop rounded balls of dough onto a baking sheet lined with parchment paper.
Baking
  1. Place the baking sheet in the oven and bake for about 10-12 minutes, or until the edges are golden brown.
  2. Let the cookies cool on a wire rack.
Filling and Assembly
  1. In a small bowl, mix 1 cup of powdered sugar and 2 tablespoons of milk until smooth to create the filling.
  2. Once the cookies are completely cooled, spread a layer of the peanut butter filling on the flat side of one cookie and top with another cookie.
