Preparation
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine 1 cup of peanut butter, 1 cup of sugar, the egg, 1/2 teaspoon of vanilla extract, and 1/4 teaspoon of salt. Mix until smooth and creamy.
- Using a tablespoon or cookie scoop, drop rounded balls of dough onto a baking sheet lined with parchment paper.
Baking
- Place the baking sheet in the oven and bake for about 10-12 minutes, or until the edges are golden brown.
- Let the cookies cool on a wire rack.
Filling and Assembly
- In a small bowl, mix 1 cup of powdered sugar and 2 tablespoons of milk until smooth to create the filling.
- Once the cookies are completely cooled, spread a layer of the peanut butter filling on the flat side of one cookie and top with another cookie.

- Serve your homemade peanut butter sandwich cookies with milk or your favorite warm beverage.
Notes
For perfect cookies, use your favorite type of peanut butter and adjust sugar for sweetness level. Store in an airtight container for up to a week or freeze for longer storage.
