Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
Wet Ingredients
  • 1 cup milk Should be at room temperature
  • 1/2 cup unsalted butter, melted
  • 2 large eggs Should be at room temperature
  • 1 teaspoon vanilla extract
Fruit Ingredient
  • 2 cups fresh peaches, diced Can substitute with frozen peaches, thawed and drained

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Grease or line a muffin pan with paper liners.
Mixing
  1. In a large bowl, combine flour, sugar, baking powder, salt, and cinnamon. Whisk together.
  2. In another bowl, mix milk, melted butter, eggs, and vanilla extract until smooth.
  3. Pour wet ingredients into dry ingredients. Stir until just combined.
  4. Gently fold in diced peaches.
Baking
  1. Scoop batter into the muffin tin, filling each cup about two-thirds full.
  2. Bake for 20 to 25 minutes, or until golden brown and a toothpick comes out clean.
Cooling
  1. Allow muffins to cool in the pan for a few minutes, then transfer to a wire rack.

Notes

Store in an airtight container at room temperature for up to 3 days, or refrigerate for a week. Can freeze for up to 3 months. Reheat in the microwave for 15-20 seconds.
