- Mix in the eggs one at a time along with the vanilla extract, ensuring everything is well combined.
- In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt. Gradually add this mixture to the wet ingredients, stirring until just incorporated.
- Stir in the rolled oats gently, ensuring they are evenly distributed.
Baking
- Using a cookie scoop or two spoons, drop rounded tablespoons of cookie dough onto the prepared baking sheets, spacing them a few inches apart.
- Bake for 10-12 minutes or until the cookies are golden brown around the edges. They might look soft in the center, but they will firm up as they cool.
Making the Cream Filling
- In a medium bowl, beat the softened cream cheese, powdered sugar, and vanilla extract together until smooth and creamy.
Assembly
- Once the cookies are completely cooled, spread a generous amount of cream filling onto the bottom of one cookie and top with another, creating a sandwich.
