Ingredients
  

For the Cookies

  • 1 cup brown sugar
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract For the cookie dough.
  • 1.5 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon salt
  • 3 cups rolled oats
For the Cream Filling
  • 1 cup cream cheese, softened
  • 0.25 cup powdered sugar
  • 1 teaspoon vanilla extract For the cream filling.

Preparation
  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, beat the softened butter, brown sugar, and granulated sugar until it’s light and fluffy—about 2-3 minutes.
  3. Mix in the eggs one at a time along with the vanilla extract, ensuring everything is well combined.
  4. In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt. Gradually add this mixture to the wet ingredients, stirring until just incorporated.
  5. Stir in the rolled oats gently, ensuring they are evenly distributed.
Baking
  1. Using a cookie scoop or two spoons, drop rounded tablespoons of cookie dough onto the prepared baking sheets, spacing them a few inches apart.
  2. Bake for 10-12 minutes or until the cookies are golden brown around the edges. They might look soft in the center, but they will firm up as they cool.
Making the Cream Filling
  1. In a medium bowl, beat the softened cream cheese, powdered sugar, and vanilla extract together until smooth and creamy.
Assembly
  1. Once the cookies are completely cooled, spread a generous amount of cream filling onto the bottom of one cookie and top with another, creating a sandwich.
