Ingredients
  

Berry Filling
  • 1 cup mixed berries (e.g., blueberries, raspberries, strawberries) Feel free to mix and match your favorite berries. Frozen berries work well too.
  • 1/4 cup sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
Pastry
  • 1 sheet puff pastry (thawed) Ensure fully thawed before rolling out.
  • 1 egg for egg wash Beaten.
  • Powdered sugar for dusting (optional)

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. On a lightly floured surface, roll out the thawed puff pastry to about 1/8 inch thickness. Cut into 4 equal squares (about 5 inches each).
  3. In a bowl, mix the mixed berries, sugar, cornstarch, and vanilla extract until berries are coated and sugar dissolves.
Assembly
  1. Place about 2 tablespoons of the berry mixture in the center of each pastry square. Be careful not to overfill.
  2. Fold each pastry square diagonally to form a triangle, press the edges together to seal, and use a fork to crimp the edges.
  3. Brush the tops with the beaten egg for a golden finish.
Baking
  1. Place turnovers on a parchment-lined baking sheet and bake for 15-20 minutes or until puffed and golden brown.
  2. Let cool for a few minutes, then dust with powdered sugar if desired.
  3. Serve warm and enjoy!

Notes

These turnovers can be prepared ahead of time and frozen before baking for a quick treat. Store in an airtight container in the refrigerator for up to 3 days or freeze for up to 3 months. Reheat in the oven at 350°F (175°C) for about 10 minutes.
