Ingredients
  

For the Pita Cups
  • 4 pieces Pita bread Cut into halves and shaped into cups
For the Filling
  • 1 cup Hummus Base layer in each cup
  • 1 cup Tzatziki sauce Layered on top of hummus
  • 1 cup Olives (mixed, pitted) Chopped or whole as desired
  • 1 cup Cherry tomatoes, halved Fresh topping option
  • 1 medium Cucumber, diced For crunch and freshness
  • 1 cup Feta cheese, crumbled Added for creaminess
  • 1 piece Red bell pepper, diced For color and taste
  • 0.5 cup Fresh herbs (like parsley or mint), finely chopped For garnish and flavor

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Cut each pita bread in half and spread the halves gently into pockets. Use kitchen scissors to cut each pocket into triangle-shaped cups.
  3. Place the pita cups on a baking sheet and bake for about 10-12 minutes or until they are golden brown and crispy, checking to avoid burning.
Assembly
  1. Once the pita is slightly cooled, add a base of hummus in each cup, followed by a dollop of tzatziki.
  2. Top the cups with cherry tomatoes, cucumber, red bell pepper, olives, and crumbled feta cheese. Sprinkle fresh herbs on top.
  3. Drizzle with olive oil and season with salt and pepper to taste.
Serving
  1. Arrange the Mezze Cups on a platter for serving and enjoy!

Notes

Store any leftovers in the refrigerator for 2-3 days, keeping toppings separate from pita to maintain freshness. Reheat pita cups in the oven at 350°F (175°C) for about 5-7 minutes before serving.
