Preparation
- Preheat your oven to 375°F (190°C).
- Cut each pita bread in half and spread the halves gently into pockets. Use kitchen scissors to cut each pocket into triangle-shaped cups.
- Place the pita cups on a baking sheet and bake for about 10-12 minutes or until they are golden brown and crispy, checking to avoid burning.
Assembly
- Once the pita is slightly cooled, add a base of hummus in each cup, followed by a dollop of tzatziki.
- Top the cups with cherry tomatoes, cucumber, red bell pepper, olives, and crumbled feta cheese. Sprinkle fresh herbs on top.
- Drizzle with olive oil and season with salt and pepper to taste.
