Homemade Mexican Pizza: A Flavorful Twist on a Classic!

Ingredients
  

  • 1 lb lean ground beef
  • 1 packet 1 oz taco seasoning
  • 1/2 cup water
  • 6 medium flour tortillas
  • 1 can 16 oz refried beans
  • 1 can 10 oz red enchilada sauce
  • 1 cup shredded cheddar cheese
  • 1 cup shredded pepper-jack cheese
  • 1 Roma tomato diced
  • 1 green onion diced
  • 1 small can sliced black olives

Instructions
 

  • Preheat your oven to 375°F. Lightly spray two baking sheets with non-stick spray and place three tortillas on each.
  • Crisp the tortillas: Bake them for 3-5 minutes, then flip and bake for another 2-5 minutes until they’re golden and crispy. Set aside.
  • Cook the beef: In a skillet over medium-high heat, cook and crumble the ground beef. Drain any excess grease.
  • Season the meat: Stir in taco seasoning and water, bringing it to a boil. Reduce to medium-low heat and let it simmer for 10 minutes. Set aside.
  • Warm the beans: Heat the refried beans in a microwave-safe bowl to make them easy to spread.
  • Assemble your pizzas:
  • Spread a thin layer of refried beans on one tortilla.
  • Add 1⁄3 of the seasoned beef mixture on top.
  • Place another tortilla over it.
  • Spread 3 tablespoons of enchilada sauce over the top tortilla, then sprinkle with cheddar and pepper-jack cheese.
  • Top with diced tomato, green onion, and black olives.
  • Repeat with the remaining tortillas to create three pizzas.
  • Bake for 5 minutes, or until the cheese is melted and bubbly.
