Crisp the tortillas: Bake them for 3-5 minutes, then flip and bake for another 2-5 minutes until they’re golden and crispy. Set aside.
Cook the beef: In a skillet over medium-high heat, cook and crumble the ground beef. Drain any excess grease.
Season the meat: Stir in taco seasoning and water, bringing it to a boil. Reduce to medium-low heat and let it simmer for 10 minutes. Set aside.
Warm the beans: Heat the refried beans in a microwave-safe bowl to make them easy to spread.
Assemble your pizzas:
Spread a thin layer of refried beans on one tortilla.
Add 1⁄3 of the seasoned beef mixture on top.
Place another tortilla over it.
Spread 3 tablespoons of enchilada sauce over the top tortilla, then sprinkle with cheddar and pepper-jack cheese.
Top with diced tomato, green onion, and black olives.
Repeat with the remaining tortillas to create three pizzas.
Bake for 5 minutes, or until the cheese is melted and bubbly.
