Preparation
- Preheat your oven to 350°F (175°C).
- In a medium bowl, combine 1 cup of flour, 1/2 cup sugar, softened butter, and 1/4 teaspoon salt. Mix until crumbly and well-blended.
- Press this mixture firmly into the bottom of an 8x8-inch baking dish to form a crust.

Filling
- While the crust bakes, mix together the diced rhubarb, 1/2 cup lemon juice, 1 cup sugar, eggs, cornstarch, and baking powder in another bowl. Stir well until combined.
- Pour the filling mixture evenly over the hot crust.
- Return the dish to the oven and bake for an additional 30-35 minutes, or until set and slightly golden on top.

- Allow the bars to cool completely, then cut into squares. Dust with powdered sugar if desired.
