Ingredients
  

For the crust
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter, softened
  • 1/4 teaspoon salt
For the filling
  • 2 cups rhubarb, diced Use fresh rhubarb for the best flavor.
  • 1/2 cup lemon juice (freshly squeezed is best!)
  • 1 cup granulated sugar For the filling.
  • 2 large eggs
  • 2 tablespoons cornstarch
  • 1/4 teaspoon baking powder

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, combine 1 cup of flour, 1/2 cup sugar, softened butter, and 1/4 teaspoon salt. Mix until crumbly and well-blended.
  3. Press this mixture firmly into the bottom of an 8x8-inch baking dish to form a crust.
  4. Bake the crust in the preheated oven for about 15-20 minutes or until it's lightly golden.
Filling
  1. While the crust bakes, mix together the diced rhubarb, 1/2 cup lemon juice, 1 cup sugar, eggs, cornstarch, and baking powder in another bowl. Stir well until combined.
  2. Pour the filling mixture evenly over the hot crust.
  3. Return the dish to the oven and bake for an additional 30-35 minutes, or until set and slightly golden on top.
Finishing Touch
  1. Allow the bars to cool completely, then cut into squares. Dust with powdered sugar if desired.

Notes

Opt for fresh rhubarb for the best flavor. You can substitute rhubarb with sliced strawberries or apples. Avoid overbaking to maintain texture, and chilling bars enhances flavor.
