  • 1 can 15 oz chickpeas, drained and rinsed
  • ΒΌ cup tahini
  • 2 tablespoons extra virgin olive oil Plus more for drizzling
  • 2 tablespoons lemon juice Freshly squeezed is best
  • 1 clove garlic, minced
  • Salt, to taste
  • Water, as needed To adjust consistency
  • Fresh parsley, for garnish (optional)
  • Paprika or cumin, for sprinkling (optional)

Method
 

Preparation
  1. In a food processor, combine the drained and rinsed chickpeas with tahini. Blend until smooth.
  2. Add in minced garlic, lemon juice, and olive oil. Blend until everything is well combined and smooth.
  3. If the hummus is a bit too thick, slowly add water, a tablespoon at a time, until you reach your desired creaminess.
  4. Taste the hummus and add salt as needed.
Serving
  1. Transfer hummus to a bowl, drizzle with olive oil, sprinkle with paprika or cumin, and garnish with parsley if desired.
  2. Grab your favorite dippers and enjoy your freshly made hummus!

Notes

For ultra-smooth hummus, remove the skins from the chickpeas before blending. Store leftovers in an airtight container in the fridge for up to a week or freeze for up to three months.
