  • 1 pound chicken breast, cut into bite-sized pieces
  • 1 cup whole wheat breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • to taste Salt
  • to taste Pepper
  • 1 large egg, beaten
  • as needed Cooking spray or olive oil for baking

Preparation
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the whole wheat breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, paprika, salt, and pepper.
  3. Dip each piece of chicken breast in the beaten egg, allowing any excess to drip off before placing it in the breadcrumb mixture. Ensure each piece is well coated.
  4. Line the coated chicken pieces on the prepared baking sheet, leaving enough space between each nugget.
  5. Lightly spray the nuggets with cooking spray or drizzle with olive oil. Bake for 15-20 minutes, flipping halfway through, until golden and cooked through.
  6. Once cooked, remove from the oven and let them cool for a minute. Serve with your favorite dipping sauces.

Notes

For gluten-free options, use almond flour or gluten-free breadcrumbs. Nutritional yeast can replace Parmesan for a dairy-free version. Store in an airtight container in the fridge for up to 3 days or freeze for longer storage.
