Main Ingredients
  • 1 cup fruit juice (your favorite flavor) Use any flavorful fruit juice.
  • 1/4 cup honey or maple syrup Adjust sweetness to taste; can swap for agave syrup for a vegan option.
  • 3 tablespoons agar-agar powder This is the gelatin-free gelling agent.
  • 1 tablespoon lemon juice Adds acidity for balance.
Optional Flavoring
  • to taste zest of lemon, orange, or fresh herbs Customize with your favorite flavors.

Method
 

Preparation
  1. In a medium saucepan, combine your fruit juice, honey or maple syrup, and lemon juice. Stir to combine well.
  2. Heat the mixture over medium heat until it starts to warm, do not let it boil.
  3. Slowly sprinkle the agar-agar powder into the warm mixture while whisking constantly to eliminate clumps.
  4. Continue to simmer for about 5 minutes, stirring frequently, until the liquid thickens slightly.
  5. Pour the mixture into silicone molds or a small baking dish lined with parchment paper.
  6. Chill in the refrigerator for at least 2-3 hours or until completely set.
  7. Carefully remove the gummies from the molds and enjoy!

Notes

Store gummies in an airtight container in the refrigerator for up to two weeks. They can also be frozen, layered with parchment paper to avoid sticking. Avoid overheating the mixture and ensure constant whisking to prevent clumping.
