Preparation
- In a large bowl, whisk together the flour, granulated sugar, baking powder, and salt until well combined.
- In a separate bowl, beat the eggs and then add milk, melted butter, and vanilla extract. Mix until smooth.
- Gradually pour the wet ingredients into the dry ingredients, mixing until just combined. A few lumps are okay.
- In a large pot, heat oil to 350°F (175°C) for frying.
- On a floured surface, roll out the dough to about 1/2 inch thick and cut the doughnuts using a round cutter.
Cooking
- Carefully fry the doughnuts in the hot oil for 1-2 minutes on each side until golden brown.
- Remove the doughnuts and place on paper towels to drain excess oil.
Glazing
- In a small bowl, whisk together powdered sugar, milk, and vanilla extract for the glaze until smooth.
- Once the doughnuts are cool enough to handle, dip them into the glaze and place them on a wire rack to set.
