Preparation
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large bowl, whisk together the flour, baking powder, baking soda, salt, and cocoa powder.
- In another bowl, beat the softened butter, granulated sugar, and brown sugar until creamy.
- Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
- Gradually add the dry ingredients and buttermilk, alternating between the two, and mix until smooth. Stir in the boiling water until well combined.
Baking
- Pour the batter evenly into the prepared cake pans and bake in the preheated oven for about 30-35 minutes, or until a toothpick comes out clean when inserted in the center.
Making the Frosting
- In a saucepan, combine sugar, evaporated milk, and butter, and cook over medium heat until the mixture thickens (about 10 minutes). Stir in coconut, pecans, and vanilla extract.
Assembling the Cake
- Once the cakes are completely cool, place one layer on a serving platter and spread a generous layer of coconut pecan frosting. Top with the second layer and frost the top and sides.
