  • 2 large large cucumbers, diced
  • 3 ripe ripe tomatoes, chopped
  • 1 small small red onion, thinly sliced Soak in cold water if too strong.
Dressing
  • 3 tablespoons olive oil Extra virgin olive oil recommended.
  • 1 tablespoon vinegar (apple cider or white)
  • to taste Salt
  • to taste Pepper

Method
 

Preparation
  1. Wash cucumbers and tomatoes thoroughly, then chop cucumbers into bite-sized cubes and tomatoes into comparable pieces.
  2. Thinly slice the red onion and soak in cold water if desired.
Mixing
  1. In a large mixing bowl, add diced cucumbers, chopped tomatoes, and sliced red onion. Toss gently to combine.
  2. Drizzle olive oil and vinegar over the vegetables. Season with salt and pepper to taste.
  3. Gently toss everything together until well coated.
Chilling
  1. Let the salad sit in the refrigerator for 10-15 minutes before serving to allow flavors to meld.

Notes

For added flavor, consider using fresh herbs like parsley or mint. Prepare the salad right before serving for maximum freshness. Store in an airtight container in the refrigerator for up to 3 days, but avoid freezing.
