Ingredients
  

For the Dough
  • 2 cups all-purpose flour
  • 1/4 cup cocoa powder
  • 1/2 cup unsalted butter, chilled and cubed Ensure butter is cold for a flaky crust.
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 1/4 cup cold water Add gradually.
  • 1 egg for egg wash Beaten for brushing.
For the Filling
  • 1/2 cup chocolate fudge filling
For the Icing (optional)
  • Powdered sugar for icing Optional for serving.

Method
 

Preparation
  1. In a large bowl, whisk together the all-purpose flour, cocoa powder, granulated sugar, and salt.
  2. Add the chilled, cubed butter and mix until it resembles coarse crumbs.
  3. Gradually add cold water, one tablespoon at a time, mixing until the dough comes together. Be careful not to overwork it.
  4. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes to firm it up.
Assembly
  1. On a floured surface, roll out the dough to about 1/8 inch thickness.
  2. Cut into rectangular shapes, roughly 3×5 inches, for the pop tart base.
  3. On half of the rectangles, place a spoonful of the chocolate fudge filling, leaving a small border around the edges.
  4. Top with another rectangle and press the edges with a fork to seal, ensuring no filling escapes during baking.
Baking
  1. Preheat your oven to 350°F (175°C).
  2. Place the finished pop tarts onto a baking sheet lined with parchment paper.
  3. Beat the egg and brush it over the tops of the pastries.
  4. Bake for 20-25 minutes or until the edges are lightly golden and the pastry has puffed up.
  5. Once baked, allow the pop tarts to cool before icing them with powdered sugar, if desired.

Notes

For healthier options, consider using almond flour instead of all-purpose flour, or coconut oil instead of butter for a dairy-free version. Store in an airtight container at room temperature for up to three days.
