Preparation
- In a large bowl, whisk together the all-purpose flour, cocoa powder, granulated sugar, and salt.
- Add the chilled, cubed butter and mix until it resembles coarse crumbs.
- Gradually add cold water, one tablespoon at a time, mixing until the dough comes together. Be careful not to overwork it.
- Wrap the dough in plastic wrap and refrigerate for at least 30 minutes to firm it up.
Assembly
- On a floured surface, roll out the dough to about 1/8 inch thickness.
- Cut into rectangular shapes, roughly 3×5 inches, for the pop tart base.
- On half of the rectangles, place a spoonful of the chocolate fudge filling, leaving a small border around the edges.
- Top with another rectangle and press the edges with a fork to seal, ensuring no filling escapes during baking.
Baking
- Preheat your oven to 350°F (175°C).
- Place the finished pop tarts onto a baking sheet lined with parchment paper.
- Beat the egg and brush it over the tops of the pastries.
- Bake for 20-25 minutes or until the edges are lightly golden and the pastry has puffed up.
- Once baked, allow the pop tarts to cool before icing them with powdered sugar, if desired.
Notes
For healthier options, consider using almond flour instead of all-purpose flour, or coconut oil instead of butter for a dairy-free version. Store in an airtight container at room temperature for up to three days.
