Method
Preparation of Dough
- In a mixing bowl, combine flour, sugar, and salt.
- Cut in the cold butter until the mixture resembles coarse crumbs.
- Gradually add cold water until the dough comes together.
- Wrap in plastic and refrigerate for at least 30 minutes.
Rolling and Filling
- On a floured surface, roll out the dough into a rectangle about 1/8-inch thick.
- Cut into rectangles of your preferred size.
- Place half of the rectangles on a parchment-lined baking sheet.
- Spoon a tablespoon of blueberry jam onto the center of each rectangle.
Sealing and Baking
- Place another rectangle on top of each filled piece and press the edges with a fork to seal them shut.
- Cut a few small slits in the top with a knife to allow steam to escape.
- Whisk the egg and brush it over each tart for a beautiful golden finish.
- Sprinkle with a little extra sugar for added sweetness.
- Preheat your oven to 350°F (175°C).
- Bake for 20-25 minutes, or until the tarts are golden brown.
Cooling and Icing
- Let the tarts cool before drizzling with icing made from powdered sugar and a tiny bit of water.
Notes
For gluten-free options, substitute with a gluten-free flour blend. Don’t skip the refrigeration step to ensure dough is easier to handle and bakes properly.
