Ingredients
  

Dough Ingredients
  • 1 cup all-purpose flour For the crust
  • 1/4 cup unsalted butter Cold and cubed
  • 1/4 cup sugar Plus extra for sprinkling
  • 1/4 teaspoon salt
  • 1/4 cup cold water
Filling and Topping
  • 1 cup blueberry jam Preferably homemade or store-bought
  • 1 egg for egg wash
  • Powdered sugar for icing

Method
 

Preparation of Dough
  1. In a mixing bowl, combine flour, sugar, and salt.
  2. Cut in the cold butter until the mixture resembles coarse crumbs.
  3. Gradually add cold water until the dough comes together.
  4. Wrap in plastic and refrigerate for at least 30 minutes.
Rolling and Filling
  1. On a floured surface, roll out the dough into a rectangle about 1/8-inch thick.
  2. Cut into rectangles of your preferred size.
  3. Place half of the rectangles on a parchment-lined baking sheet.
  4. Spoon a tablespoon of blueberry jam onto the center of each rectangle.
Sealing and Baking
  1. Place another rectangle on top of each filled piece and press the edges with a fork to seal them shut.
  2. Cut a few small slits in the top with a knife to allow steam to escape.
  3. Whisk the egg and brush it over each tart for a beautiful golden finish.
  4. Sprinkle with a little extra sugar for added sweetness.
  5. Preheat your oven to 350°F (175°C).
  6. Bake for 20-25 minutes, or until the tarts are golden brown.
Cooling and Icing
  1. Let the tarts cool before drizzling with icing made from powdered sugar and a tiny bit of water.

Notes

For gluten-free options, substitute with a gluten-free flour blend. Don’t skip the refrigeration step to ensure dough is easier to handle and bakes properly.
