Preparation
- In a mixing bowl, combine the all-purpose flour, powdered sugar, and salt.
- Cut in the chilled butter until the mixture resembles coarse crumbs.
- Gradually add cold water, mixing until a dough forms.
Chill the Dough
- Wrap the dough in plastic wrap and refrigerate for about 30 minutes.
Prepare Pastries
- Once chilled, divide the dough in half. Roll out each portion into a rectangle about 1/8 inch thick.
- Cut the dough into equal rectangles or squares based on your desired size.
- Place a spoonful of blueberry jam in the center of each rectangle, being careful not to overfill.
Seal and Bake
- Top each filled rectangle with another cut-out pastry piece, press the edges to seal, and crimp with a fork.
- Brush the tops with the beaten egg.
- Preheat your oven to 375°F (190°C) and place the pop tarts on a baking sheet lined with parchment paper.
- Bake for 20-25 minutes or until golden brown.

- While the pop tarts are baking, mix powdered sugar with a splash of milk and optional vanilla extract until smooth.
