  • 1 cup unsalted butter, softened Must be at room temperature
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 1/2 cup Biscoff spread
  • 2 1/2 cups all-purpose flour Can be substituted with gluten-free flour blend
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Mix in the Biscoff spread, vanilla extract, and ground cinnamon until well combined.
  4. In a separate bowl, whisk together the all-purpose flour, baking soda, and salt. Gradually add to the wet ingredients, mixing until just combined.
  5. Cover the dough and chill in the fridge for 30 minutes for best results.
  6. Drop tablespoon-sized portions of cookie dough onto a lined baking sheet with sufficient space between each cookie.
  7. Bake for 10-12 minutes until the edges are lightly golden and centers remain soft.
  8. Cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

For added texture, consider folding in pieces of Biscoff cookies. Store cookies in an airtight container for freshness.
