Ingredients
  

Main Ingredients
  • 6 large large eggs
  • 1/2 cup milk
  • 1/2 cup shredded cheese (cheddar, mozzarella, or your choice)
  • 1/2 cup diced vegetables (spinach, bell peppers, onions, etc.)
  • 1/2 cup cooked and crumbled Halal sausage or turkey bacon (optional)
  • to taste Salt
  • to taste Pepper
  • as needed Butter or oil for greasing the baking dish

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. Grease a muffin tin with butter or oil to prevent sticking.
  3. In a large mixing bowl, whisk together the eggs and milk until well combined. Add salt and pepper to taste.
  4. Fold in the shredded cheese and diced vegetables (and sausage, if using), ensuring everything is evenly distributed.
  5. Carefully pour the egg mixture into each muffin cup, filling them about three-quarters full.
  6. Place in the preheated oven and bake for about 18-20 minutes or until the egg bites are fluffy and the tops are golden.
  7. Remove from the oven and allow to cool for a few minutes before gently popping them out of the muffin tin. Serve warm and enjoy!

Notes

You can customize ingredients based on preferences. To checkfor doneness, insert a toothpick into the center; it should come out clean. Store in an airtight container for up to 5 days or freeze for 2 months. Reheat in the microwave for 30-60 seconds.
