Preparation
- Preheat the oven to 350°F (175°C).
- Grease a muffin tin with butter or oil to prevent sticking.
- In a large mixing bowl, whisk together the eggs and milk until well combined. Add salt and pepper to taste.
- Fold in the shredded cheese and diced vegetables (and sausage, if using), ensuring everything is evenly distributed.
- Carefully pour the egg mixture into each muffin cup, filling them about three-quarters full.
- Place in the preheated oven and bake for about 18-20 minutes or until the egg bites are fluffy and the tops are golden.
- Remove from the oven and allow to cool for a few minutes before gently popping them out of the muffin tin. Serve warm and enjoy!
Notes
You can customize ingredients based on preferences. To checkfor doneness, insert a toothpick into the center; it should come out clean. Store in an airtight container for up to 5 days or freeze for 2 months. Reheat in the microwave for 30-60 seconds.
