Ingredients

For the filling
  • 6 cups Apples, peeled, cored, and sliced (Granny Smith or Honeycrisp recommended)
  • 1 cup Granulated Sugar Adjust to taste
  • ½ cup Brown Sugar For added depth
  • 2 teaspoons Cinnamon Feel free to add more for extra warmth
  • ¼ teaspoon Nutmeg A little goes a long way
  • 2 tablespoons Lemon Juice To keep the apples fresh and zesty
  • 2 tablespoons Cornstarch For thickening
  • ¼ teaspoon Salt To enhance flavors

Method

Preparation
  1. Begin by peeling, coring, and slicing your apples into even-sized pieces for uniform cooking.
  2. In a large mixing bowl, whisk together the granulated sugar, brown sugar, cinnamon, nutmeg, cornstarch, and salt until well blended.
  3. Toss the sliced apples into the bowl and drizzle with lemon juice. Mix until the apples are evenly coated with the sugar and spice mixture.
Cooking
  1. Transfer the apple mixture to a large saucepan over medium heat. Stir occasionally and let it cook for about 10 minutes, or until the apples start to soften and release their juices.
  2. Continue to stir for an additional 5-10 minutes until the filling thickens, coating the apples in a delicious syrup. Remove from heat and let it cool before using.
Storage
  1. You can use this filling immediately in your favorite pie or refrigerate it in an airtight container for later use.

Notes

Choose a mix of tart and sweet apples for more complex flavor. Avoid overcooking the apples to retain structure. Adjust cornstarch if the filling is too watery. Store in an airtight container for up to 5-7 days or freeze for up to three months.
