Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, whisk together the flour, baking soda, baking powder, salt, ground cinnamon, and nutmeg until well combined.
- In another bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
- Add the apple cider, egg, and vanilla extract to the butter-sugar mixture. Mix until just combined.
- Gradually add the dry mixture to the wet mixture, stirring gently until no flour streaks remain. If using chopped apples, fold them in at this point.
Baking
- Use a cookie scoop or tablespoon to drop dough onto a parchment-lined baking sheet, spacing them about 2 inches apart.
- Bake for about 10-12 minutes or until the edges are golden brown.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
Store cookies in an airtight container at room temperature for up to a week. For longer storage, freeze them in a sealed zipper bag for up to three months. Reheat in the microwave for 10-15 seconds or in the oven at 300°F (150°C) until warm.
