  • 2 cups potatoes, diced Can use fresh or frozen.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet over medium heat, brown the ground beef for about 5-7 minutes, breaking it apart. Drain any excess fat.
  3. Add the chopped onion and sauté for 2-3 minutes until soft and translucent.
  4. Stir in the diced tomatoes (with juice) and drained green beans into the skillet, mixing well.
  5. Layer in the diced potatoes and combine everything together. Season with salt and pepper to taste.
  6. Pour the mixture into a greased 9x13-inch baking dish.
  7. Sprinkle shredded cheddar cheese over the top.
Cooking
  1. Cover the dish with aluminum foil and bake for 30 minutes.
  2. Remove the foil and bake for an additional 15 minutes until the cheese is melted and golden brown, and the potatoes are tender.
  3. Let it cool for a few minutes, then serve warm.

Notes

Substitutions include using ground turkey or chicken; add extra vegetables for added flavor. Avoid overcrowding to prevent sogginess.
