Preparation
- Preheat your oven to 350°F (175°C).
- In a large skillet over medium heat, brown the ground beef for about 5-7 minutes, breaking it apart. Drain any excess fat.
- Add the chopped onion and sauté for 2-3 minutes until soft and translucent.
- Stir in the diced tomatoes (with juice) and drained green beans into the skillet, mixing well.
- Layer in the diced potatoes and combine everything together. Season with salt and pepper to taste.
- Pour the mixture into a greased 9x13-inch baking dish.
- Sprinkle shredded cheddar cheese over the top.
Cooking
- Cover the dish with aluminum foil and bake for 30 minutes.
- Remove the foil and bake for an additional 15 minutes until the cheese is melted and golden brown, and the potatoes are tender.
- Let it cool for a few minutes, then serve warm.
Notes
Substitutions include using ground turkey or chicken; add extra vegetables for added flavor. Avoid overcrowding to prevent sogginess.
