Ingredients
  

Main Ingredients
  • 1 pound ground turkey or beef (Halal-certified) You can also use shredded chicken or roasted veggies for a vegetarian option.
  • 1 can black beans, rinsed and drained
  • 1 cup corn kernels (frozen or fresh)
  • 1 cup cherry tomatoes, halved
  • 1 cup diced bell pepper (any color)
  • 1/2 cup red onion, diced
  • 1 avocado, diced
  • 2 cups romaine or mixed salad greens
  • 1 cup shredded cheese (cheddar or Mexican blend) Feta cheese can be used for a tangy kick.
  • Taco seasoning to taste
  • Tortilla chips for serving Ensure they are gluten-free if required.
  • Salsa and/or dressing of choice

Method
 

Cooking the Meat
  1. In a large skillet over medium heat, add the ground turkey or beef. Break it apart with a spatula, and cook until browned, about 7-10 minutes. Drain any excess fat if needed.
  2. Sprinkle the taco seasoning over the cooked meat. Stir well to incorporate, adding a splash of water to make it extra saucy if desired. Cook for an additional 2-3 minutes, then remove from heat.
Combining Ingredients
  1. In a large mixing bowl, toss together the salad greens, black beans, corn, cherry tomatoes, diced bell peppers, and red onion.
Assembling the Salad
  1. Add the seasoned meat to the veggies in the bowl and gently toss to combine. Top with diced avocado and shredded cheese.
Serving
  1. Serve the salad immediately with tortilla chips on the side for that perfect crunch. Drizzle with salsa or your favorite dressing if desired.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. You can reheat the meat before combining it with fresh veggies for lunch. Keep toppings separate if storing extras.
