Method
Cooking the Meat
- In a large skillet over medium heat, add the ground turkey or beef. Break it apart with a spatula, and cook until browned, about 7-10 minutes. Drain any excess fat if needed.
- Sprinkle the taco seasoning over the cooked meat. Stir well to incorporate, adding a splash of water to make it extra saucy if desired. Cook for an additional 2-3 minutes, then remove from heat.
Combining Ingredients
- In a large mixing bowl, toss together the salad greens, black beans, corn, cherry tomatoes, diced bell peppers, and red onion.
Assembling the Salad
- Add the seasoned meat to the veggies in the bowl and gently toss to combine. Top with diced avocado and shredded cheese.
Serving
- Serve the salad immediately with tortilla chips on the side for that perfect crunch. Drizzle with salsa or your favorite dressing if desired.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. You can reheat the meat before combining it with fresh veggies for lunch. Keep toppings separate if storing extras.
