  1. Cook the Pasta: Begin by boiling a large pot of salted water. Add in your pasta and cook according to the package directions until al dente, usually around 8-10 minutes. Reserve about ½ cup of the pasta cooking water before draining.
  2. Prepare the Broccoli: In the same pot or a separate pan, add the chopped broccoli to boiling water for about 3-5 minutes until it turns bright green and is tender but still crisp. Drain and set aside.
  3. Sauté the Garlic: In a large skillet, heat the olive oil over medium heat. Once hot, add the minced garlic and sauté for about 1-2 minutes, being careful not to let it burn.
  4. Combine Ingredients: Add the shredded rotisserie chicken to the skillet, stirring it through the garlic oil for about 2 minutes.
  5. Mix Everything Together: Toss in the drained pasta and broccoli. If the mixture seems dry, add a little reserved pasta water to achieve the desired consistency.
  6. Add Flavor: Finish by seasoning the pasta with salt, pepper, and grated Parmesan cheese. Toss everything together until well combined.

Notes

For best results, you can substitute rotisserie chicken with grilled chicken or chickpeas for a vegetarian version.
