  • 1 cup cottage cheese
  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 1 large egg
  • 1 tbsp baking powder
  • 1 tsp salt

  • to taste everything bagel seasoning
  • to taste cheese

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the all-purpose flour, whole wheat flour, baking powder, and salt. Stir well.
  3. In a separate bowl, whisk together the cottage cheese and egg until smooth. Pour this mixture into the dry ingredients and mix until a dough begins to form.
  4. Dust your countertop lightly with flour and knead the dough for about 2 minutes until smooth.
  5. Divide the dough into 6 equal pieces. Roll each piece into a ball and poke a hole in the center to form the bagel shape.
  6. If using toppings, sprinkle them on a plate and gently dip the tops of each bagel into the toppings to coat.
  7. Place the formed bagels onto the prepared baking sheet and bake for 20-25 minutes until slightly golden and firm to the touch.
  8. Let them cool for a few minutes, then enjoy warm or toasted.

Notes

For gluten-free options, use a gluten-free flour blend. Be gentle when kneading the dough and experiment with different toppings.
