Ingredients
  

For the Burritos
  • 4 large large eggs
  • 1 cup egg whites
  • 1/2 cup black beans, rinsed
  • 1/2 cup spinach, chopped
  • 1/2 cup diced tomatoes
  • 1/2 cup shredded cheese (Cheddar or your favorite type)
  • 4 whole whole wheat tortillas

Preparation
  1. Prep your ingredients: Rinse the black beans, chop the spinach, and dice the tomatoes.
Cooking
  1. Heat a non-stick skillet over medium heat and pour the egg mixture into the pan. Stir gently until the eggs are soft and scrambled.
  2. Once the eggs start to set, gently fold in the black beans, spinach, and diced tomatoes. Cook for an additional 1-2 minutes until everything is heated through, and the spinach has wilted.
Assembly
  1. Warm the whole wheat tortillas slightly to make them pliable.
  2. Spoon the egg and veggie mixture onto the center of each tortilla. Top with shredded cheese.
  3. To wrap the burrito, fold in the sides and then roll from the bottom up, tucking in the filling as you roll for a secure seal.
Serving
  1. Serve the burritos immediately or grill them in the pan for a couple of minutes on each side to get a golden crisp.

Notes
