Preparation
- Start by cracking the eggs into a bowl and whisking together with the egg whites. Add salt and pepper to taste. Set aside.
Cooking the Filling
- In a non-stick skillet over medium heat, add the cooked turkey sausage or tofu. Sauté for about 2-3 minutes until warmed through. Then, toss in the chopped spinach and cook for an additional minute until wilted.
- Pour the whisked egg mixture into the skillet. Stir gently to combine everything. Cook, stirring occasionally, until the eggs are scrambled and cooked to your liking.
- Once the eggs are done, gently fold in the black beans and shredded cheese. Allow the cheese to melt slightly.
Assembly
- Lay out a tortilla on a flat surface. Spoon the egg mixture into the center, fold in the sides, and roll it up tightly from the bottom.
Serving
- If desired, cook the rolled burrito in the skillet for 1-2 minutes on each side to get it slightly crispy. Serve with salsa on the side for that extra kick!

Substitutions: If turkey sausage isn't your thing, you can easily swap in diced grilled chicken or more veggies for a meatless option. Make sure whatever you choose is Halal-friendly! Timing: Don’t overcook the eggs; they should be fluffy and slightly soft for the perfect texture. Avoid overstuffing your burritos; less is more for easier rolling. For storing, keep in an airtight container in the fridge for up to 3 days, or freeze individually wrapped for up to a month.
