Preparation
  1. Start by chopping your spinach and halving the cherry tomatoes. Set aside the shredded cheese for later.
Cooking
  1. In a skillet over medium heat, add olive oil. Once hot, add the turkey sausage links. Cook for about 5-7 minutes, turning occasionally, until golden brown and fully cooked.
  2. Remove the sausage from the skillet and slice into bite-sized pieces.
  3. In the same skillet, reduce the heat to low and crack the eggs directly into the pan. Whisk gently until combined. Cook until they start to set, stirring occasionally for about 3-4 minutes.
  4. Stir in the fresh spinach and cherry tomatoes. Cook for an additional 2 minutes, allowing the spinach to wilt and the tomatoes to warm through. Season with salt and pepper.
Assembly
  1. Begin layering your bowl. Add the scrumptious mixture of eggs, spinach, and tomatoes, then top with the sliced turkey sausage and sprinkle shredded cheese on top.
