Ingredients
  

Crust ingredients
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 cup unsalted butter, softened
  • 1 teaspoon baking powder
  • ½ teaspoon salt
Peach filling ingredients
  • 2 cups fresh peaches, peeled and sliced Use ripe peaches for best flavor.
  • 2 tablespoons lemon juice
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • ½ teaspoon ground cinnamon

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish.
  2. In a mixing bowl, combine 1 cup of flour, ½ cup sugar, ½ teaspoon baking powder, ¼ teaspoon salt, and ½ cup butter. Mix until crumbly, and press into the bottom of the greased baking dish.
Peach Filling
  1. In another bowl, toss the sliced peaches with 2 tablespoons lemon juice, ½ cup sugar, ½ teaspoon baking powder, ¼ teaspoon salt, 1 teaspoon vanilla extract, and ½ teaspoon cinnamon.
Assembly and Baking
  1. Spread the peach mixture over the crust evenly and sprinkle any remaining crust over the top if desired.
  2. Bake for 30-35 minutes, or until the top is golden brown and the peaches are bubbly. Allow to cool before cutting into squares.

Notes

These bars can be served warm or cold. Pair with vanilla ice cream or whipped cream for extra indulgence. Store in an airtight container in the refrigerator for up to 5 days or freeze for up to 3 months.
