Ingredients
  

For the Cake
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 8 oz cream cheese, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups fresh blueberries Can substitute with frozen blueberries
For the Crumb Topping
  • 1/2 cup brown sugar
  • 1/2 cup rolled oats
  • 1/4 cup chopped nuts (optional)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9-inch square baking pan or line it with parchment paper.
  3. In a large bowl, whisk together flour, granulated sugar, baking powder, baking soda, and salt.
  4. In a separate bowl, beat the softened butter and cream cheese together until smooth. Add the eggs and vanilla, mixing until just combined.
  5. Gradually add the dry ingredients to the wet mixture, blending until just mixed. Be careful not to overmix!
  6. Gently fold in the fresh blueberries.
Crumb Topping and Baking
  1. In a small bowl, mix brown sugar, oats, and optional nuts. Sprinkle this mixture over the blueberry batter.
  2. Pour the combined batter into the prepared pan and bake for 35-40 minutes or until a toothpick comes out clean.
  3. Allow the cake to cool in the pan for a bit before transferring it to a wire rack.
  4. Once cooled, slice and enjoy!

Notes

Serve with vanilla ice cream, whipped cream or fresh fruit for an extra indulgent experience. Store leftovers in an airtight container in the refrigerator for up to 4 days.
