Preparation
- Wash your vegetables thoroughly. Dice the potatoes, slice the carrots, chop the onion and celery, and mince the garlic.
Cooking Base
- In a large pot over medium heat, add a splash of olive oil. Once warm, add the chopped onion, carrots, and celery. Sauté for about 5 minutes until the veggies start to soften and the onions turn translucent.
- Stir in the minced garlic and dried thyme. Cook for an additional minute.
Combine and Simmer
- Add the diced potatoes, vegetable broth, and canned tomatoes (including juice) to the pot. Bring to a gentle boil, then reduce the heat and let it simmer for about 20 minutes, or until the potatoes are tender.
- Toss in the chopped green beans, stir well, and let simmer for an additional 5 minutes. Season with salt and pepper to taste.
Serving
- Ladle the stew into bowls and garnish with fresh parsley if desired. Enjoy!
